Red meats, our bold alcohol-free pairings

Pairing with red meat has long been the preserve of tannic wines, rich textures, and powerful aromas. But the world of alcohol-free drinks is more than capable of accompanying these generous dishes. You simply need to choose the right intensities, the right bitterness and textures able to stand up to cooking juices, bold marinades or aged meats.

Well-crafted dealcoholised red wines are wonderful allies. An alcohol-free merlot, with supple tannins and aromas of dark fruits, will pair beautifully with duck breast with figs or a tournedos with wine sauce. A 0.0% pinot noir, delicately structured, can accompany a beef fillet or a rare roast. For smokier or spicier dishes, a fuller-bodied red such as an alcohol-free cabernet sauvignon will be the right choice.

When it comes to alcohol-free beers, opt for deeper recipes: an amber or a dark beer, with notes of roasted malt, will pair with a grilled piece of beef or a braised meat. An alcohol-free stout — so rare it deserves a mention — can even make the perfect pairing with a vegetable-based bœuf bourguignon or a chilli.

For those who enjoy fresher sensations, a fermented drink with woody or spiced notes will balance the richness of a rack of lamb or a herb-crusted steak. You can also dare a shrub based on blackcurrant or pomegranate vinegar: the acidic tension will cut through the dense flesh with elegance.

And of course, mocktails have their say. A creation based on black cherry juice, smoked tea infusion and alcohol-free bitters can evoke a complex red. A homemade beetroot and juniper berry syrup, lengthened with sparkling water, will surprise on a grilled meat with Provençal herbs.
