Le Rouge - Cuvée Révolutionnaire Merlot & Tannat - Moderato

Moderato Rouge draws on two emblematic grape varieties from the South-West: Merlot and Tannat. The former brings roundness, the latter its smooth tannins. Vinified in the classic style, they are then dealcoholised by vacuum distillation at low temperature, to preserve the full aromatic complexity. From a Terra Vitis and HVE certified vineyard, this red wine is part of a responsible and environmentally conscious approach. The Moderato red cuvée undergoes dealcoholisation by vacuum distillation at low temperature. This technology involves extracting the alcohol gently, without subjecting the wine to excessive heat conditions, in order to preserve its structure derived from fermentation. The rigour of this process guarantees a product faithful to its origin, in keeping with the quality standards expected of traditional winemaking.
