How to pair a vegetable starter without alcohol?
Plant-based cuisine is an infinite field of expression: plays of textures, colours, temperatures and cooking methods. When it opens a meal, it often calls for a starter that is all about freshness and lightness. And to accompany it without jarring with that delicacy, alcohol-free drinks are ideal partners.
Let us forget the idea that only a glass of white wine can elevate a plant-based starter. The subtlety of iced infusions, the zip of floral bubbles, the liveliness of a dry kombucha or the aromatics of a yuzu tonic can prove far more precise and refined.
Crudités, crunchy salads and vegetable tartares gain in freshness when paired with a lightly acidic or citrusy drink. A shrub (a drink based on fruit vinegar) or a citrus sparkling drink without alcohol adds an interesting tension. Beetroot or courgette carpaccios, dressed with fragrant oils or seeds, are enhanced by a plant-based drink with herbs: a cold thyme-lemon infusion, a botanical basil soda, or a rosemary tonic.
