Gastronomic white wine - Arensbak

This gastronomic white wine from Arensbak is born from organic oolong kombucha, fermented with quince, melon, lemon thyme, and calendula. A second fermentation in oak barrels adds body, tannins, and tension. Made in Copenhagen in the spirit of fine alcohol-free wines, it pairs beautifully with delicate, vegetable-based dishes. Crafted without pasteurization or filtration, it reveals its full aromatic potential in a natural and refined setting.

Initial fermentation of organic oolong tea transformed into kombucha, followed by an infusion of fresh fruit and herbs. The second fermentation takes place in oak barrels, developing natural tannins and a lingering aroma. Unfiltered, unpasteurized, very low in alcohol (<0.5%).
