Long description

This gastronomic white wine by Arensbak is born from an organic oolong kombucha, fermented with quince, melon, lemon thyme and marigold. A second fermentation in oak barrels brings body, tannins and tension. Aged in Copenhagen in the spirit of great alcohol-free wines, it pairs wonderfully with refined and plant-based dishes. Crafted without pasteurisation or filtration, it reveals its full aromatic potential in a natural and refined setting.

Technical description

Initial fermentation of organic oolong tea transformed into kombucha, followed by an infusion of fresh fruit and botanicals. The second fermentation takes place in oak barrels, developing natural tannins and aromatic length. Unfiltered, unpasteurised, very low in alcohol (<0.5%).

Ingredients

Water, cane sugar, quince puree, cantaloupe-melon puree. Flavors: oak, oolong tea, lemon thyme, marigold flower. Flavor enhancers: lactic acid, tartaric acid, citric acid, malic acid, kombucha cultures.
