Our alcohol-free pairings for your seafood

Seafood has this ability to capture a liquid terroir: that of iodine, freshness, and subtlety. We expect them to be straight, precise, without heaviness or richness. You therefore need drinks capable of accompanying this directness without crushing or diluting it. The challenge: finding the balance between minerality, liveliness, and lightness.

The first natural candidates: dry dealcoholised wines. A well-structured 0.0% sauvignon blanc, with notes of citrus and flint, will be the perfect companion for an oyster platter. Its lively acidity cleanses the palate and prolongs the iodine flavours. For shellfish such as prawns, langoustines or crab, you can also turn to alcohol-free bubbles, such as a dealcoholised crémant or a sparkling wine based on chardonnay.

For a more adventurous pairing, you can turn to elaborate kombuchas: a spirulina or sea fennel kombucha brings a hint of umami that elevates a ceviche. A yuzu tonic or bergamot tonic will awaken a salmon sashimi or a seaweed salad. As for white fish carpaccios, they love pairings with cold infusions of lemongrass or verbena.

And what about cooked seafood? A mussel gratin pairs wonderfully with a light, floral alcohol-free lager. A fish soup or a Thai broth enjoys the intensity of a homemade vegetable juice, such as cucumber-celery juice or lemony carrot juice. And an alcohol-free cocktail based on green apple juice, ginger and dill will be the ideal companion for a sea bream tartare.

As a general rule, drinks that succeed with seafood share three qualities: a good acidity, a lean texture, and a fresh aromatic profile. We avoid sweet, overly tannic or smoky flavours. The aim is not to impress, but to create a dialogue between the glass and the plate.
