Rib0 Muscat Sylvaner - Cave de Ribeauvillé

The Rib0 Muscat–Sylvaner is a delicate encounter between the Muscat and Sylvaner varieties (50/50), grown on Alsatian soils, vinified in the classic style and then aged on fine lees (3–6 months). The respectful dealcoholisation preserves the clean, fruity aromas. The attack is crisp, light, with a lovely liveliness and suppleness. Dry and easy-drinking, it embodies the expression of the Alsatian terroir in an alcohol-free version, ideal with grilled fish, savoury tarts or oysters.

Whole-bunch pressing, temperature-controlled fermentation, ageing on fine lees for 3–6 months. Dealcoholisation by cold vacuum distillation, with no chemical additives. Flavour balancing with concentrated must.
