Fruits are concentrates of life. Through their natural acidity, their sweetness, their texture and their character, they offer an infinite range of culinary variations. As a dessert, in a salad, in a tart, as a carpaccio, roasted in the oven or as a compote, they deserve particular attention when it comes to pairing them with a drink. And contrary to popular belief, it is entirely possible — and even desirable — to move beyond the eternal fruit juice.
Pairings with fresh fruits often rely on the balance between acidity and sweetness. A sparkling alcohol-free drink made from grape or apple will bring out the best in strawberries, raspberries or peaches. A floral drink with elderflower, rose or jasmine will pair beautifully with a citrus carpaccio or an exotic fruit salad. For a perfectly ripe mango, a mocktail with mint and lime offers a contrasting freshness.
Roasted or cooked fruits (apples, pears, plums) love more enveloping drinks: a spiced kombucha with gentle spices (cinnamon, clove) or a homemade apple and cider vinegar shrub will work wonders. A dealcoholised white wine in the style of a muscat or gewurztraminer, very floral, can also create a truly beautiful pairing with a thin tart or a crumble.
For red fruits, which often have a hint of pronounced acidity, think of an iced infusion with dark berries or hibiscus, or a mocktail made with beetroot and redcurrant. It is original, structured and highly complementary. A light alcohol-free red wine, such as a fruity pinot noir, also works well with desserts featuring cherry or blackberry.
With very juicy fruits (watermelon, melon), the answer may lie in a saline or mineral drink: a sparkling water with lime and basil, or a very dry lemon kombucha, will balance the watery texture and the sweetness of the fruit. And for fresh figs or grapes, nothing beats a well-balanced glass of alcohol-free muscat.
Finally, with dried or candied fruits (apricots, dates, dried figs), play the pairing on contrast: a bitter tonic, a tangy shrub or a mocktail with grapefruit will rebalance the richness on the palate.
