Long description

This effervescent Arensbak is designed as an alcohol-free sparkling wine. Based on fermented Longjing green tea, an infusion of fruits and plants is added, then the whole is briefly aged in barrel. The natural effervescence comes from a second fermentation, as in the traditional method. Unpasteurised, low in sugar, lively and elegant, it stands out for its balance between fruit, tension and delicate bubbles. Perfect as an aperitif or with iodine-rich dishes.

After two years of research, they developed complex proxies based on fermented kombucha, with no grapes or alcohol, yet rich in tannins, structure and aromatic depth.
