Organic alcohol-free Chardonnay 0% - Opia

ÔPIA Chardonnay is an unfermented white nectar crafted using highly technical methods. After a cold skin-contact maceration (4°C) for 8 hours, the organic grapes grown in the South of France undergo aromatic ageing on seeds and oak. The result: floral finesse of acacia, white pear, lemon zest and a burst of tangy freshness, with a beautiful lingering finish. Alcohol-free, sulphite-free, vegan and halal, it embodies a rare balance between purity and structure, to be savoured with complete sophistication.

<p>The grapes are harvested at perfect ripeness and at night to take advantage of the cool temperatures, which are beneficial to aromatic finesse. After destemming and crushing, a cold pellicular maceration is carried out (4°C). The maceration, which lasts 8 hours, is performed before pressing in order to extract the beneficial compounds from the grape, such as polyphenols, tannins... Aromatic complexity is achieved through ageing in the form of infusions of organic grape seeds and French oak.</p>
