Night harvesting preserves aromatic freshness. Gentle pneumatic pressing, static settling. Fermentation at a controlled temperature of 16°C, weekly lees stirring. Aged on fine lees for four months. Dealcoholization by vacuum rectification columns at a temperature below 35°C. Sterile membrane filtration, protein stabilization with bentonite. Final acidity adjustment, aseptic bottling under nitrogen.
