Grown on the hillsides of Gascony, the vines benefit from sandy-silty and clay-limestone soils, and a sunny, temperate climate. The grapes are carefully monitored and harvested at night to preserve their freshness. After gentle pressing, low-temperature fermentation and ageing on fine lees, the wines are blended to ensure consistency and aromatic balance. The alcohol is then removed by vacuum evaporation at low temperature, an innovative technique that respects the integrity of the wine and preserves all its complexity.
