From a traditional Merlot vinification (night harvesting, short fermentation), this wine then undergoes dealcoholisation by partial vacuum evaporation at low temperature. This gentle physical process removes the ethanol whilst preserving the original aromatic profile. The addition of a touch of French oak extract brings structure to the whole, guaranteeing an authentic wine sensation, with a final alcoholic strength of 0.0%.
