Grown on clay-limestone and clay-silica terroirs, this unfermented grape juice comes from 19-year-old vines and early harvests, carried out before the wine's optimal ripeness to guarantee freshness and tension. After cold mechanical pressing, it is produced in stainless-steel tanks to preserve its aromatic purity. Without fermentation, it retains the fruit's natural sugars. Stabilised by gentle hot pasteurisation (75°C), it keeps for two years, offering an elegant and authentic alternative.
