Mechanical harvesting, optical sorting. Total destemming, short maceration (72 hours). Fermentation in temperature-controlled stainless steel tanks, programmed pump-overs. Early draining, gentle pressing. Dealcoholization by vacuum evaporation at a controlled temperature of 30°C. Clarifying filtration, tartaric stabilization. Final blending adjusted for acidity and tannins. Rapid bottling to preserve the fruit's freshness.
