Mechanical harvesting, optical sorting. Full destemming, short 72-hour maceration. Fermentation in temperature-controlled stainless steel tanks, programmed pump-overs. Early draining, gentle pressing. Dealcoholisation by vacuum evaporation, controlled temperature 30°C. Clarifying filtration, tartrate stabilisation. Final blend adjusted for acidity and tannins.
