Hand-harvested from dedicated plots in Touraine. Traditional vinification in temperature-controlled stainless steel tanks, partial malolactic fermentation. Dealcoholization by reverse osmosis at low temperature, preserving volatile aromatic compounds. Fine filtration, cold tartaric stabilization. Bottling under a neutral atmosphere. Patented process guaranteeing less than 0.5% alcohol while preserving the tannic structure and flavor complexity of the grape variety.
